We Thought It Would Be a One-and-Done. We Were Wrong.

Given our new ventures in Miami, it felt inevitable that we would eventually make our way to Carbone. If we're being honest, we all assumed it would be one of those restaurants you visit once, appreciate for the experience, and then move on. A place built as much on reputation as it is on food.
After our inaugural visit, we couldn't have been more wrong.

Miami's version of Carbone arrives dressed to impress. Imagine classic Italian-American glamour turned up several notches. The dining room feels like old-school New York hospitality with Miami's unmistakable flair layered on top. Every detail is polished, energetic, and larger than life. If the original concept was grand, Carbone Miami feels like grand on steroids.
Reservations were not easy to secure, so we happily accepted an 8:00 PM seating. Fortunately, it worked perfectly with our travel schedule. What surprised us most wasn't how busy the restaurant was when we arrived, but how busy it remained throughout the evening. Tables continued turning well past 10:00 PM, with a steady stream of guests eager to experience what has become one of Miami's most sought-after reservations.
As always, we came hungry.

We started with several of the evening's special crudos. Fresh, vibrant, and beautifully executed, each showcased the quality of the seafood while still feeling approachable. They were the perfect introduction to a menu that manages to balance luxury and comfort remarkably well.

One appetizer immediately caught our attention: the Burrata with Caviar. As a family that never wants to sleep on a caviar dish, because, “Everything is better with caviar”. The combination of creamy burrata and premium caviar creates an indulgent contrast of richness and salinity that somehow feels both decadent and restrained at the same time. It was our first time experiencing this particular pairing, and it quickly became one of the most memorable dishes of the evening.
Then came the dish everyone talks about: the Spicy Rigatoni Vodka.
Yes, it lives up to the hype.
This is one of those rare dishes that manages to exceed expectations despite years of social media attention and endless recommendations. Perfectly cooked pasta coated in a rich, slightly spicy vodka sauce that somehow makes you immediately start planning your return visit before you've finished the plate. We would absolutely return to Carbone for this dish alone.
For our entrée, we selected the Dover Sole Piccata. Elegant, bright, and deboned tableside, it provided the perfect contrast to some of the richer dishes that preceded it. The lemon, capers, and delicate fish reminded us that while Carbone has become famous for a handful of signature dishes, there is considerable depth throughout the menu.

What impressed us most wasn't a specific plate. It was how seamlessly the entire experience came together. The service was polished and the dining room buzzed with energy without becoming overwhelming. The food delivered on every promise.

We expected a trendy restaurant we'd check off the list.
Instead, we found a restaurant we'll actively look forward to returning to.
For a city filled with headline-making restaurants, that's perhaps the highest compliment we can give.
And yes, we'll be ordering the Spicy Rigatoni Vodka again.
