Hosted with tomatoes as the central theme, this dinner could have been a predictable array of soups, bisques, or bruschettas. Instead, Chef Zack reimagined classic dishes, transforming the humble tomato into the star of a six-course symphony.
Adding depth to the evening, Scott Welcer of Welcer Farms, known for his exceptional heirloom tomatoes, shared insights about his craft and the journey of these vibrant fruits from farm to table.
The Courses:
First Course – Tuna Tartare
Second Course – Short Rib Agnolotti
Third Course – Tomato Consommé
Fourth Course – Sea Bass
Fifth Course – Ribeye
Sixth Course – Olive Oil Cake
