When we travel, we love finding an omakase, so when we learned that Charlotte had a Michelin-recommended Edomae sushi counter with just six seats, consider the reservation booked.

Omakase Experience by Prime Fish is led by Chef Robin Anthony, a 2026 James Beard Award semifinalist for Best Chef: Southeast. Chef Robin has built something pretty remarkable in Charlotte. Prime Fish and Omakase Experience by Prime Fish were the only sushi restaurants in the Carolinas recognized when the Michelin Guide launched its first American South selection in 2025.


The experience is incredibly intimate. With only six seats at the counter, you are watching Chef Robin work directly in front of you as he takes you through the progression of the menu. The Uni Ise Ebi and A5 Wagyu Tartare were spectacular, and the nigiri throughout the evening was exceptional. Then, of course, there was the caviar supplement accompanied by Krug. Caviar and Krug? You know we were very happy.



Sommelier Terrell Johnson was extraordinary and truly made the evening even more special. We love a pairing that introduces us to something new, and Terrell did exactly that. Each pour had a purpose, and his knowledge and enthusiasm made us want to know more about what was in our glass. For example, one of the most special pours of the night was Daimon 55 Junmai Ginjo, a sake created specifically for Prime Fish by Daimon Brewery in Osaka. Having something produced exclusively for the restaurant made the pairing even more memorable and was exactly the kind of detail we love discovering when we travel. We loved that we could bring a bottle home for our collection. 


Krug

For us, that is part of what makes a great omakase so much fun. Yes, you go for exceptional sushi, but the best experiences teach you something along the way. Between Chef Robin behind the counter and Terrell guiding us through the pairings, there was a lot to learn here and even more to enjoy.
